Аннотация: Abstract: Fatty acid composition and content of 2 forms of sockeye salmon Oncorhynchus nerka from lakes in Kamchatka Peninsula (Russia) were compared. One form of sockeye salmon was anadromous ("marine"), that is, adult fish migrated in ocean to feed and grow and than return in the lake to breed. Fish of another form, kokanee, never migrate in the ocean. Per cent levels of the main indicators of nutritive value, eicosapentaenoic acid (EPA, 20:5n-3), and docosahexaenoic acid (DHA, 22:6n-3), were significantly higher in the landlocked O. nerka. However, concentrations of EPA and DHA per wet weight of filets were higher in the marine form, because of the relatively higher content of sum of fatty acids in their muscle tissue. As concluded, fish fed in marine environment had higher contents of long-chain n-3 fatty acids per wet weight than fish of the same species, fed in fresh waters. In general, both the anadromous sockeye salmon and the landlocked kokanee salmon can be recommended for human diet as a valuable product concerning contents of EPA and DHA. Аннотация: Seasonal variations of fatty acid contents in muscle tissue of one of the main food fish species in Siberian rivers, grayling, Thymallus arcticus, were studied over 3 years. Under a comparatively low range of water temperature variations, spawning appeared to be the main cause of seasonal changes in contents of quantitatively prominent and essential fatty acids in fish filets. In general, fish accumulated essential polyunsaturated fatty acids (PUFA), such as eicosapentaenoic (EPA) and docosahexaenoic (DHA), in their muscle tissue before reproductive seasons and then the PUFA seemed to be transferred into gonads during their formation. Hard roe of Siberian grayling had 3-4 times higher PUFA contents, than had that of the muscle tissue. The fish species, T. arcticus, was found to be a valuable source of the essential PUFA, including EPA and DHA, for human diet. В© 2007 Elsevier Ltd. All rights reserved.

Аннотация: Contents of fatty acids in filets of unfrozen (control), boiled, fried, roasted and boiled in a small amount of water humpback salmon, collected from a wholesale market in Krasnoyarsk city (Siberia, Russia) were analyzed. Special attention was paid to essential polyunsaturated fatty acids of ?3 family: eicosapentaenoic, 20:5?3 (EPA) and docosahexaenoic, 22:6?3 (DHA). Heat treatment in general did not decrease content of EPA and DHA in humpback, except a modest reduction during frying. Cooked humpback appeared to be the valuable source of essential ?3 PUFAs, namely EPA and DHA. It was hypothesized that the absence of significant reduction of PUFAs' contents in red flesh of fishes of Salmonidae family during heat treatment may be due to a high level of natural antioxidants which formed in the course of evolution as adaptation to their ecological niche. Аннотация: Fatty acid content of raw and cooked zander (Sander lucioperca) was studied. Special attention was paid to long-chain polyunsaturated fatty acids: eicosapentaenoic, 20:5 n-3 (EPA) and docosahexaenoic, 22:6 n-3 (DHA), and also to the n-6/n-3 ratio, which are regarded as indicators of nutritive value. As found, the heat treatments, boiling, stewing and frying, including those in a convection steam oven (CSO), did not significantly decrease the content of EPA and DHA in the products. Boiling and stewing appeared to give products of a higher nutritive value, regarding the above indicators, than frying and cake preparation. Frying of zander in CSO was found to be more beneficial for nutrition compared to pan-frying. The cooked zander had higher EPA and DHA contents than many other popular food fish species, and also had a high nutritive value due to the low n-6/n-3 ratio when boiled and stewed.

Аннотация: Triploid fish has become an important item of commercial aquaculture, but data on its fatty acid (FA) composition are still controversial, especially regarding essential polyunsaturated fatty acids, eicosapentaenoic acid (20:5n-3, EPA) and docosahexaenoic acid (22:6n-3, DHA). We studied FA composition and content of diploid and triploid pink salmon Oncorhynchus gorbuscha, reared in aquaculture in a bay of the White Sea (Russia). FA composition, measured as percentages of total FA of triploids and immature diploid females significantly differed from that of mature diploid fish. Specifically, mature diploids had higher percentage of EPA and DHA in their muscle tissue (filets) compared to that of triploids and immature diploid females. Nevertheless, the contents of EPA and DHA per mass of the filets in diploid and triploid specimens were similar. Thus, no special efforts are needed to improve EPA and DHA contents in filets of triploids. © 2016 Elsevier Ltd

Аннотация: In several Russian northern lakes and rivers, Arctic cisco Coregonus autumnalis, least cisco C. sardinella, peled C. peled, tugun C. tugun, broad whitefish C. nasus, whitefish C. lavaretus and vendace C. albula were sampled in periods of officially permitted commercial fishery. Special attention was paid to contents (mg g(-1) of wet weight) of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) in muscle tissues (filets), which are essential for human nutrition. The highest values of EPA + DHA content in semi-anadromous fish and freshwater fish were recorded for C. autumnalis from the Yenisei River, 17.60 mg g(-1) wet weight, and for C. lavaretus from the Sobachye Lake, 16.61 mg g(-1) wet weight, respectively. Intra-genus variations of EPA + DHA contents of Coregonus species were from 1.87 to 17.60 mg g(-1) wet weight. Since the congeneric species were genetically close to each other, the variations in EPA and DHA contents were thought to be caused primarily by ecological factors: migrational capability, type of feeding and trophic status of aquatic ecosystems. In general, the majority of studied species appeared to be of a high nutritive value for humans, although unfavorable environmental conditions could considerably diminish this value.
